OVERNIGHT COFFEE CAKE

Ingredients

  • 2/3 cup shortening
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • dash nutmeg
  • 1/2 tsp salt
  • 1 tsp soda
  • 1 tsp baking pwd
  • 1 cup buttermilk

Directions

  • Combine all of the above ingredients in a large bowl with an electric mixer. (This does not work well, unless you use an electric mixer. It needs volume.)
  • Beat on low speed until moistened. Beat on medium-high speed for 3 minutes.
  • Pour into a greased and floured 9x13” pan.

Notes

You may bake this right away, instead of refrigerating overnight. It turns out just as well.

Very good ~ spicy and moist
