OYSTER SOUP

Ingredients

  • 2 dz. shelled oysters
  • 2 cups. milk
  • 2 pats butter
  • Contained
  • 1/8 cup celery, minced
  • 2 1/2”thick slices of boiled Potatoes
  • salt & pepper to taste
  • paprika.

Directions

  • Heat milk to boiling in a sauce
  • pan, stirring Add celery &
  • potatoes & cook for 5 to 6
  • minutes. Mash potatoes,
  • then add oysters & season with
  • salt & red pepper to taste.
  • Bring to boil again & simmer 3 to
  • 5 minutes.
  • Pour into soup plates. Place 1
  • pat of butter on each serving and
  • sprinkle with paprika
