Why I Love This Recipe

This healthy and hearty baked oatmeal is gluten free, vegan and perfect for your next weekend breakfast or brunch with the family.


Ingredients You'll Need

Dry:
3 c oats
2 t baking powder
1/2 t salt

Wet:
2 c unsweetened almond milk
1 T pure vanilla extract
3 T maple syrup
1 medium ripe banana, mashed
2 flax eggs (2 T flaxmeal + 6 T water)
8 T salted natural peanut butter

Mixed Berry Chia Jam: (adapted from The Kitchn)
3 c frozen mixed berries
3 T maple syrup
3 T chia seeds


Directions

1. Make your Chia Jam: Heat frozen mixed berries in a saucepan over medium high heat until bubbling. Remove from heat and stir in maple syrup and chia seeds. Blend or use a food processor until smooth. Store in a mason jar and set aside.


2. Preheat the oven to 350 degrees. Grease a 10x12 baking dish.


3. Mix dry ingredients together in large bowl.


4. Mash banana thoroughly in the bottom of a medium bowl. Add the rest of the wet ingredients.


5.A dd wet ingredients to the dry ingredients and stir to combine.


6. Pour mixture into prepared baking dish. Top with big drizzles of 1/4-1/2 c of the chia jam. Bake 25-30 minutes. Let sit another 5 minutes before serving.


7.Optional: top with more peanut butter and jam.
