Why I Love This Recipe

I actually entered this pesto and came in 2nd place with some very well know chefs. I think the secret here is using pistachios instead of pine nuts. I also add a little cilantro for color too. It gives you a delicious flavor and also brings a great green color to the sauce. Pesto freezes well and will stay for a long time in your refrigerator.


Ingredients You'll Need

2 cups fresh basil, leaves only
1 bunch cilantro , leaves only
5 fresh whole garlic cloves
1/3 cup pistachios
1/4 teaspoons salt
1 stick sweet butter softened
Salt to taste


Directions

Place basil, cilantro and garlic in a work bowl of the food processor. Puree until finely minced. Add pistachios and puree finely. Add softened butter and salt. Place in plastic wrap and shape into a log and set aside. Follow instructions for recipe you are making.
