PICKLED JICAMA

 


INGREDIENTS

  • 1 medium jicama, peeled and thinly sliced
  • 1/2 cup water
  • 1/2 cup vinegar
  • 1 medium onion, sliced
  • 4 garlic cloves, peeled
  • 1 teaspoon splenda
  • 1/3 cup vegetable oil
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 bay leaf

DIRECTIONS

Place jicama in a saucepan. Add water, vinegar, onion, garlic, splenda and salt. Bring mixture to a boil and simmer until jicama is tender. Add oil, pepper, oregano and bay leaf. Continue to boil for 5 minutes. Remove from heat and cool to room temperature. Refrigerate at least 24 hours before serving. Makes 3 1/2 cups
