Unbaked Pie Shell
3 cups chopped fresh pineapple
1 cup sugar
1 vanilla bean
½ cup cornstarch
1 cup water
1 egg for wash
Chop pineapple into small pieces, and place in pot with sugar, and water.
Scrape vanilla seeds from pod and put in the mix.
Cook until pineapple is tender.
Add a little water to the cornstarch and mix into the hot mixture. Continue stirring as the mixture thickens.
Remove from heat and let cool.
Fill pie crust and top with solid or lattice crust top, and crimp edges together.
Paint egg wash on top.
Bake until crust is golden brown.
