PORK CHOPS AND BARLEY CASSEROLE
1 1/2 c. water
1 (16 oz.) can tomatoes,
3/4 c. barley
1 tsp. chili powder
1/4 tsp. dry mustard
1/4 tsp. salt and pepper
1 Tbsp. vegetable oil
4 pork chops
1 medium green pepper
1 medium onion, chopped
1 (8 oz.) can tomato sauce
Bring the water, tomatoes, barley, chili powder, dry mustard, salt and pepper to a boil.
Cover and simmer for 20 minutes.
Brown pork chops in oil for 5 minutes on each side; set aside.
Chop green pepper and onions; cook for 5 minutes.
Stir in tomato sauce and barley mixture.
Pour into greased 12 x 8 x 2-inch baking dish. Arrange chops on top and sprinkle with paprika. Cover tightly with foil.
Bake for 40 minutes at 350 degrees.
Remove foil; top chops with pepper rings.
Bake for 10 minutes.
