Why I Love This Recipe


Ingredients You'll Need

1 1/2 cups whole wheat flour

1 cup quick oats

3/4 cup firmly packed brown sugar splenda blend

3 scoops Whey Crisps Natural

1 tsp baking powder

1/2 tsp baking soda

1 1/2 tsp pumpkin pie spice

1 cup canned pumpkin

3/4 cup fat-free milk

1/3 cup canola oil

2 egg whites


Directions

Preheat oven to 400 degrees and line a 12-cup muffin tin with paper liners. Combine dry ingredients in a large bowl. In a medium bowl, combine the pumpkin, milk, oil and egg(s), blending well. Stir pumpkin mixture into dry ingredients until the dry ingredients are just moist. Fill muffin liners ¾ full and bake for 22-25 minutes.
