- 4 boneless chicken breasts
- 1 cup plain yogurt
- 1 lemon juiced
- 6 T. cucumber minced
- 3 chives sliced
- salt and pepper to taste
- crushed pine nuts for garnish
- Method: In a saute' pan with olive oil, sear the chicken breasts on both sides, finish in an oven @ 350 or turn heat on pan to low and finish cooking in the pan.
- Sauce: After all ingredients have been prepared, mix together and adjust seasoning and spoon over chicken and garnish with pine nuts.
NotesI got this recipe while watching a cooking demo at Macy's one Saturday afternoon. The chef was from a local restaurant called Jacksons. They were also having a drawing for a set of Al Clad cookware which I WON.
