1 green pepper
1 red pepper
EVOO to coat pan
3 crushed garlic cloves
season to taste: chili powder, cumin, paprika
1 can of each: black beans and kidney beans,
1/2 can of chickpeas
smoked chipotle peppers
1 can of fire roasted crushed tomatoes
1/2 cp veggie stock
1/2 cp water
a pinch of sugar.
Sautee peppers, carrot, and onion in olive oil for approx. 15 minutes.
Add garlic, chili powder, cumin, and paprika. Lowered flame
Add black beans, kidney beans, and chickpeas.
After 2 min add smoked chipotle peppers and crushed tomatoes. Bring to a boil.
Add veggie stock and water. Let boil for 2 minutes.
Simmered for a half hour.
While cooling add cilantro and sugar.
