Why I Love This Recipe

Parker would eat these for every meal and every snack in between if he could. Feel free to add in a bunch of other things to make these more fun or even healthier! I love to add shredded carrots/zucchini (about 1/2 cup), mini chocolate chips (1/4 cup), pumpkin puree (instead of applesauce & yogurt).


Ingredients You'll Need

2 eggs
1 tsp vanilla
4-5 small/med bananas mashed
½ tsp salt
1/3-1/2 cup yogurt
1 Motts packet of applesauce or 1/3 cup
2 tbs coconut oil, melted
¼ tsp cinnamon
1 cup whole wheat flour
1 cup quick oats
¼ cup brown or granulated sugar
1 tsp baking soda


Directions

Heat oven to 375 degrees. Mix all wet ingredients (through coconut oil) together in a large bowl. Add the dry ingredients and mix thoroughly.


Spray a mini muffin tin with cooking spray. Use a meatball scoop to fill each about 3/4 way full. Bake for 10-14 minutes, or until a toothpick inserted comes clean. Let cool on a cooling rack for 10-15 minutes.
