Pasta Primavera

Serves 4 | Prep Time | Cook Time

Ingredients

1.5 cups broccoli
half of whole onion, diced
1 zucchini, slice and quarter (up to 2 next time?)
3 garlic cloves, minced
6 basil leaves, chopped
1/2 cup snow peas
1/2 cup frozen peas

2 tbsp olive oil
3 tbsp butter, divided

Sauce:
1 cup chicken broth
1/2 cup white wine
1 cup heavy cream
1/2 cup Parmesan cheese


Cut broccoli, add to bowl with snow peas.


Cut zucchini, set aside


Cut onion and garlic, set aside in bowl


Chop basil leaves, set aside



Boil small pot of water, add salt


Add broccoli, cook 1 minute


Add snow peas, cook another 30-60 seconds


Drain, rinse with cold water, set aside



Bring pasta water to boil


Add 1 lb angel hair (do 3/4 lb next time)


Cook ~2-3 minutes, drain



Add 2 tbsp butter and 2 tbsp olive oil to large pan


Heat and melt butter


Add garlic, onion, cook 1-2 minutes


Add zucchini, cook another 1 minute


Set aside



Add chicken broth, white wine, 1 tbsp butter


Heat to low boil for 1-2 minutes


Add heavy cream (next time do 1/2 cup + 1/2 half and half?)


Add Parmesan cheese


Salt and pepper to taste


Add basil


Add all veggies


Add frozen peas


Add pasta
