  • 2 cans of plum tomatoes
  • 2 or 3 fresh cloves garlic
  • Good quality olive oil
  • 1 onion
  • 1 tbsp. dry oregano
  • 1 tbsp. dry basil
  • 1 bay leaf
  • 1 beef bone (or oxo cube)
  • 1 carrot (whole)
  • 1/4 cup red wine


  • Separate tomatoes from the seeds with a food grinder. In a large pot, add enough oil to well cover the bottom. heat to medium and add onions and fresh crushed garlic. When onion is soft and garlic is fragrant, add the tomatoes. Add all spices, carrot, beef bone and bring to a boil. Boil for 10 minutes then simmer for 1 or 2 hours. Add wine when down to a simmer
