Pasta With Sausage & Creamy Tomatoes
1 tablespoon olive oil
1/2 pound Sweet Italian sausage links, casings removed, crumbled (I used 1 pound ground Fresh Sweet Italian Pork Sausage)
¼ teaspoon crushed dried red pepper flakes
¼ cup diced onions
1½ cloves garlic, minced
1 (14.5 ounce) can Italian plum tomatoes, drained, coarsely chopped (forgot to drain mine and it was still delicious)
3/4 cup whipping cream
¼ teaspoon salt
6 ounces pasta, boiled to package instructions and drained
1½ tablespoons minced parsley (didn't use)
Grated parmesan cheese for serving
Heat oil in a heavy skillet over medium heat.
Add sausage and crushed red pepper. Cook until sausage is no longer pink, stirring frequently, about 7 minutes.
Add onion and garlic to skillet and cook until onion is tender and sausage is light brown, stirring occasionally, about 7 minutes.
Add tomatoes, cream, and salt. Simmer until mixture thickens slightly, about 4 minutes.
Cook pasta in large pot of boiling water. Drain.
Bring sauce to a simmer. Add pasta to sauce and cook until pasta is heated through and sauce thickens, stirring occasionally, about 2 minutes.
Divide pasta between plates. Sprinkle with parsley.
Serve, passing Parmesan separately.

I've had this recipe so long but every time I've been at the grocery store, staring at the link sausages and wondering which one to buy, couldn't make up my mind and ended up leaving without a purchase because none of them sounded good to me in this recipe! Well, I finally found what I liked and it will be great in lots of recipes! Hubby & I were at Jungle Jim's (a regular & speciality grocery store) for the 1st time and this guy had samples out of their freshly ground Sweet Italian Pork Sausage mixed with baby sea shell noodles in spaghetti sauce! That's it, I was sold and after all these years of saving this recipe, I finally made it! Delicious! I love plum tomatoes and whipping cream and added to the sweet sausage was perfect! Nice and creamy and the sweet sausage shined throughout! I also bought some freshly baked Asiago Cheese bread, added melted butter and garlic and grilled it on my flat griddle for some great garlic bread! Delicious meal!
This sausage would be good in chili, a topping for a pizza, Hanky Panky an appetizer I make and many more recipes I'm sure!
