Why I Love This Recipe

My brother worked at a restaurant where they served this. He asked my mom to call and get the recipe, and it has been a family favorite ever since!


Ingredients You'll Need

8 oz cooked rigatoni (bite sized works great)
2 nice sized boneless chicken breast halves - grilled and sliced
1 medium tomato diced
3 oz feta cheese
½ can light chicken broth (15-16 oz)
fresh spinach leaves
1 T butter
basil, oregano, garlic powder, salt & pepper
pesto (optional)
Italian breadcrumbs


Directions

1. In a hot large frying pan with olive oil, sauté tomatoes and feta cheese with garlic


2. Add chicken, butter, broth, and other seasonings


3. Add rigatoni and cook to allow the liquid to reduce a little


4. Add some spinach at the end right before serving


5. Top each serving plate with a little pesto and breadcrumbs
