Pasta with Spinach and Cream Sauce (1 entree or 2 side dish servings)

Ingredients

2 oz. whole wheat pasta
3 oz fresh spinach
2 oz. sliced fresh mushrooms
1 oz. drained and chopped roasted red pepper strips
Olive oil cooking spray
Garlic salt to taste
Crushed red pepper to taste

1 oz. mascarpone
1 T. whipping cream
1 T. garlic spread
1 ½ oz. shredded fontina


Cook pasta according to package directions. Toss spinach, mushrooms and red peppers in cooking spray and spices to season and sauté until spinach has wilted and mushrooms have released their juices. Toss pasta and veggie mixture. Over low heat whisk remaining ingredients until smooth, pour over pasta and veggie mixture and serve. 607 calories.
