PAULETTE'S BEEF STEW IN BEER

Ingredients

  • 1 1/2 lbs stew meat
  • 2 yellow onions, sliced
  • 1 t salt
  • 1/2 t pepper
  • 1/4 c packed brown sugar
  • 24 oz beer - I use budweiser
  • 1 can diced tomatoes
  • 4 T roasted garlic
  • 3 russet potatoes, peeled and cut in 1 1/2" pieces
  • 2 carrots, cut in 2" pieces
  • 3 stalks celery, cut in 2" pieces
  • 1 sweet potato, peeled and cut into 1 1/2" pieces
  • 1/4 c flour
  • salt and pepper to taste

Directions

  • Place meat in slow cooker set to high, spread onions over top
  • Add beer, diced tomatoes, salt, pepper and brown sugar
  • Add vegetables and mix flour with small amount of water then add to mixture
  • Once liquid comes to a boil, set to low and cover
  • Cook for 4-6 hours or until meat is tender
  • Add salt and pepper to taste

Notes

I really like cooking with beer - it seems to always add another dimension to whatever you are cooking with. My friend Paulette makes this and was kind enough to share her family recipe with me.
