Paulette's Beef Stew in Beer

Serves 6-8 | Prep Time 15 | Cook Time 360

Ingredients

1 1/2 lbs stew meat
2 yellow onions, sliced
1 t salt
1/2 t pepper
1/4 c packed brown sugar
24 oz beer - I use budweiser
1 can diced tomatoes
4 T roasted garlic
3 russet potatoes, peeled and cut in 1 1/2" pieces
2 carrots, cut in 2" pieces
3 stalks celery, cut in 2" pieces
1 sweet potato, peeled and cut into 1 1/2" pieces
1/4 c flour
salt and pepper to taste


Place meat in slow cooker set to high, spread onions over top


Add beer, diced tomatoes, salt, pepper and brown sugar


Add vegetables and mix flour with small amount of water then add to mixture


Once liquid comes to a boil, set to low and cover


Cook for 4-6 hours or until meat is tender


Add salt and pepper to taste
