Peach Blueberry Cobbler

For topping:
1/3 cup white sugar
1/3 cup brown sugar
1/2 teaspoon baking powder
1 3/4 cups all-purpose flour
1/8 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup butter, coarsely chopped
1 egg
1/2 teaspoon vanilla extract
1 cup rolled oats
1 cup pecans, chopped

For filling:
4 cups peaches, peeled and pits removed, sliced 1/2" thick
4 cups blueberries, frozen or fresh
1/2 cup white sugar
4 teaspoons cornstarch

1. Preheat the oven to 375 degrees.

2. In a medium bowl prepare topping: stir together white and brown sugars, baking powder, flour, salt and cinnamon.

Use a fork or pastry cutter to blend in the butter, egg and vanilla.

Add rolled oats and pecans - mix thoroughly. Dough will be crumbly. Set aside.

3. In another bowl prepare filling: combine peaches and blueberries.

Add sugar and cornstarch, stirring to coat. Spoon into 9x13 baking pan, spreading evenly. Crumble reserved topping evenly over the fruit layer.

5. Bake in preheated oven for 45 minutes, or until top is golden brown.

Serve warm with whipped cream or vanilla ice cream.
