6 peaches peeled, stoned, and quartered
2 tablespoons fresh mint leaves
1/3 cup chopped hazelnuts
3 egg whites at room temperature
¾ cup of sugar
1 cup dessert wine such as muscat or sauterne
Pre-heat oven to 350 degrees
Arrange peaches in an ovenproof dish and scatter over the mint leaves and hazelnuts,
then pour over the wine. Put the dish in the oven and bake for 10 minutes. Take it out and let it cool.
Increase oven temperature to 400 degrees.
Meanwhile, beat the egg whites until stiff peaks form. While beating, add the sugar gradually until you have stiff peaks again. Spoon the meringue over the peaches to
cover them completely, then bake for approximately 20 minutes until the surface is
golden. Serve immediately, while still warm.
