Peachy Pork Chops
Small amount of water
2 Tbsp Olive oil
Salt and pepper
2 jars baby peaches
4 boneless pork chops
1/2 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped celery
1/4 cup white cooking wine
1/2 cup chicken broth
Preheat oven to 350 degrees.
Place oil in skillet, just enough to coat pan. Season chops with salt and pepper, then dredge in flour.
Shake excess flour from chops and brown each side in pan.
Remove to 13 x 9 baking dish.
Add onions, peppers, and celery, to skillet pork chops were in and stir well.
Allow to cook for 2-3 minutes, then add wine & stir.
Cook 1 minute.
Pour on top of chops.
Cover with foil and bake until pork is tender 20-25 minutes.
Add peaches on top during the last 10 minutes of baking time.
