Peachy Rice Pudding
1 1/3 cups water
2/3 cup long grain rice
1/2 of a 12 ounce can evaporated milk
1/3 cup mixed dried fruit bits
2 teaspoons honey
1/4 teaspoon pumpkin pie spice or ground cinnamon
1/8 teaspoon salt
1 cup sliced,peeled peaches or frozen sliced peaches,thawed
1/4 cup vanilla yogurt
in a medium sauce pan stir together the water and uncooked rice. bring to a boiling;reduce heat.simmer,covered,for 15 to 20 minutes or til rice is tender
stir evaporated milk,fruit bits,honey,the 1/4 teaspoon pumpkin pie spice or cinnamon,and the salt into cooked rice.bring just to boiling:reduce heat to medium-low
.cook.uncovered,about 5 minutes or until mixture is thick and creamy,stirring frequently.serve pudding warm topped with peaches and yogurt.
