Each year I try a couple new cookies and when this one caught my eye, I couldn't resist it being on my list this year! A peanut butter cookie covered in chocolate already sounds wonderful yes, but wait for it.....the surprise inside....a miniature peanut butter cup! WOW, heaven in a cookie!


  • 1 Cup Butter Flavor Shortening
  • 3/4 Cup Firmly Packed Brown Sugar
  • 1/2 Cup Sugar
  • 1/2 Cup Creamy Peanut Butter
  • 1 Large Egg
  • 1 teaspoon Vanilla
  • 2 Cups Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 40-45 Miniature Peanut Butter Cups
  • Glaze:
  • 1 teaspoon Liquid Shortening
  • 1 Cup Semi-Sweet Chocolate Chips
  • 2 Tablespoons Creamy Peanut Butter


  • Heat oven to 375 degrees
  • Spray baking sheets lightly with non-stick spray
  • Combine Shortening, Brown Sugar, Sugar and Peanut Butter in a Bowl or Mixer
  • Beat on medium speed until well blended
  • Beat in Egg and Vanilla
  • Combine Flour, Baking Soda and Salt in another bowl
  • Mix into wet mixture at a low speed until fully blended
  • Form rounded teaspoonfuls of dough around each miniature peanut butter cup
  • Enclose entirely
  • Place 2 inches apart on the cookie sheet
  • Bake 8-10 minutes or until just browned
  • Remove and place on a cooling rack
  • Combine Liquid Shortening, Chocolate Chips and Peanut Butter in a microwave safe bowl
  • Microwave on medium (50% power) for 1 minute
  • Stir and repeat until smooth
  • Dip cookies in Chocolate and let set until Chocolate is firm
  • Note: I actually used a small spoon to swirl the chocolate onto the cookies instead of dipping them and then also used the same method of melting chocolate above with peanut butter chips and shortening, placed that in a decorator bag (or you could use a plastic bag with one small corner cut out) and drizzled back and forth over each cookie to acheive a professional look.
