Why I Love This Recipe
I found this one on TOH Recipes board a couple of years ago. It is excellent and has become a family favorite!!
Ingredients You'll Need
1/2 cup creamy peanut butter
1/2 cup water
1/4 cup soy sauce
1/4 teas garlic powder
2 teas sesame oil
1 1/2 cups cooked chicken leftovers, cut into chunks
3 packages Ramen noodles
2 cup veggies (stir-fry types or whatever you like/have)
Directions
Wisk together peanut butter, water, soy, garlic, and oil.
Cook the Ramen (don't use the flavor packets but don't throw them out...use them in place of boullion in other places). Heat the chicken (or as we say in my house, nuke it).
Steam, stir-fry or microwave the veggies.
Stir together the noodles, chicken and veggies then add sauce and stir until well-combined.
Kay says: I used fresh broccoli, cauliflower and carrots for this recipe and stir-fried them in a bit of peanut oil.
I didn't have leftover chicken, so I had cooked up some chicken breasts just so I could try this recipe. Next time I make it, I will just stir fry the raw chicken and then the veg.
I will also add some bean sprouts, bamboo shoots and maybe some water chestnuts.
I think they will just make an excellent recipe even better!!
I have a recipe for a stir-fry pork that uses peanuts and I think I will also throw in a handful of those next time around.
I can't say enough good things about this recipe.
I love it when I try a new recipe and it turns out to really impress me. And this one does that and then some.
I will definitely serve this to guests! They'll love it, too!! I honestly believe that!!
