Pear Bread

Serves 8-10 | Prep Time 20 | Cook Time 1 hour

Ingredients

4 cups pear sliced thin
2 cups sugar
3 cups plain flour (you can mix 1/2 and 1/2)
3/4 cup of oil (you can cut down on the oil
and add applesauce)
2 eggs beaten
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoon baking soda
1 teaspoon vanilla
1 cup chopped pecans


Mix 1 1/2 cups of sugar with pears. Let stand 1 1/2 to 2 hours. Mix the other 1/2 cup sugar with rest of the dry ingredients. Add oil and eggs then stir in pears (pear juice will be the only liquid) bake at 350 degrees for 1 hour. (Put foil on top to prevent burning)
