Pear Cranberry Crisp
3 very ripe pears, chunked
1 cup whole cranberries
1/4 cup maple syrup
2 tbsp lemon juice
1/4 cup brown sugar
1 tbsp flour
1 tbsp butter
1/2 cup oatmeal
Heat oven to 400.
In a medium bowl, combine pears, cranberries, maple syrup, and lemon juice; toss and set aside. In another bowl, combine oatmeal, brown sugar, and flour.
Cut in butter until consistency resembles coarse crumbs and dough just holds together.
Spoon pear/cranberry mixture into a greased oval baking dish, top with dry mixture.
Bake until topping is brown and crisp, about 10 minutes.
Reduce heat to 350 and bake 20-25 minutes more, until fruit is bubbling.
Serve with vanilla bean ice cream.
