Pecan Crusted Salmon
4 (6oz) salmon fillets
salt and pepper
2 Tbsp Dijon mustard
2 Tbsp butter, softened
1 1/2 Tbsp honey
1/4 c. dry bread crumbs
1/4 c. chopped pecans
2 tsp chopped fresh parsley
Sprinkle salmon w/ salt and pepper. Place skin face down on greased baking dish.
Combine butter, mustard, and honey. Brush on fillets.
Combine bread crumbs, pecans, and parsley. Spoon mixture evenly to top of each fillet.
Bake at 450 degrees F for 10 minutes or until fish flakes evenly. Serve with whole wheat couscous and green beans almandine. Enjoy!!! :)
