PENNE WITH SAUSAGE, GOAT CHEESE AND BROCCOLI (CAROLINA THYME)
Penne with Sausage, Goat Cheese and Broccoli (Carolina Thyme)
INGREDIENTS
- 2T olive oil
- 12oz smoked sausage
- 2 garlic cloves
- 1 (14oz) can chopped tomatoes(drained)
- 3c broccoli
- ¼ c white wine
- salt and pepper
- package of pasta
- ½ c parm cheese
- 2oz goat cheese
DIRECTIONS
1) Heat 2T olive oil in large skillet. Add 12oz smoked sausage and 2 garlic cloves. Saute until sausage is browned
2) Add 1 (14oz) can chopped tomatoes(drained), and cook over high eat until all moisture is evaporated
3) Add 3c broccoli and ¼c white wine. Cook and stir for 1min., and season with salt and pepper
4) Pour tomato mixture over cooked pasta, add ½ c parm cheese and 2oz goat cheese. Cook over low heat until cheese melt, stirring constantly
