Pennysyvania Dutch Potatoes
Boil 6 - 8 peeled potatoes in salt water until tender.
Saute 1 chopped onion in butter until soft.
Drain potatoes and mash using 3/4 c. milk.
Add sauteed onion, 2 slices cubed white bread, 1/4 c. butter, 1 T. flour, 1 egg and T. parsley.
Season to taste with salt & pepper.
Add another cup milk and whip mixture thoroughly. Place in buttered casserole and bake at 350 degrees for 1 hour.
