PEPPER CRUSTED FLANK STEAK

Ingredients

  • flank steak
  • crushed pepper corns
  • salt & pepper
  • 1/2 medium red onion, chopped
  • 2 tbsp Dijon mustard
  • 1/2 cup balsamic vinegar
  • 1/2 cup virgin olive oil
  • mesculin mix

Directions

  • Coat flank steak with crushed pepper corns and season with salt. Grill to your desire. Set aside.
  • In a saucepan cook red onion until soft, about 2 mins. Add Dijon mustard & mix well. Add balsamic vinegar and bring to a boil. Gradually add olive oil, season with salt and pepper. Place mesculin mix on a dinner plate. Cut steak into thin slices on an angle and place on top of greens. Sprinkle with balsamic vinaigrette.
