Peppered Pawpaw Kebabs
1/2 medium pawpaw
8 slices prosciutto
1/4 cup (60ml) mayonnaise
2 T milk
1/2 t cracked black pepper
1 T freshly chopped coriander
Peel pawpaw and cut into medium sized pieces, thread onto skewers.
Allow 2 skewers for each person.
Place the skewers on serving plates with the prosciutto then drizzle with dressing.
For the dressing, mix together the mayonnaise, milk, cracked black pepper and coriander in a small jug.
Allow to stand for 30 minutes for the pepper to flavour the sauce.
Serve with wedges of lime to squeeze over the pawpaw.
The dressing can be made a day ahead.
