Peppermint Meringue Bites
2 egg whites
1/4 tsp. cream of tartar
1/4 tsp. peppermint extract
2/3 cup sugar
1 Tbsp. crushed hard peppermint candy
Heat oven to 250 degrees.
Line cookie sheets with foil.
In a small bowl beat egg whites, cream of tartar and peppermint extract until foamy.
Gradually add sugar 1 Tbsp. at a time, beating 3 to 5 mins. or till stiff peaks form.
Pipe or spoon 1 1/4 inch mounds on foil lined cookie sheets.
Sprinkle with peppermint candy.
Bake at 250 degrees for 25 to 35 mins. ur until crisp & dry.
Cool completely, remove from cookie sheet.
Makes 3 dozen pieces.
