PEPPERY CHICKEN
Peppery Chicken
Serves 8 each serving has 180 calories and 12 grams of saturated fat.
INGREDIENTS
- 8 skinned chicken breast halves
- 2 T olive oil
- 2 T soy sauce
- 2 T honey
- 1/2 t thyme
- 1/2 t paprika
- 1/4 t cayenne pepper
- 1 T white vinegar
- 1/2 t allspice
- 1 t ground pepper
- 2 C sliced mushrooms
DIRECTIONS
Preheat oven to 375. Place chicken in a shallow dish. Combine oil, soy sauce, honey, thyme, paprika, cayenne, vinegar, allspice and pepper and pour over chicken. Marinate in the refrigerator for at least 1 hour.
Bake chicken for 30 to 45 minutes. Surround chicken with mushrooms, spoon the sauce over them and bake 5 to 10 minutes more.
