Perfect Pork Chops with Peppers a la Tisha
4-6 pork chops
Heat a Cast Iron Skillet till screaming hot (medium high flame for about 10 minutes)
Preheat your oven to 350 degrees
Flour for dredging (add salt, pepper and cayenne pepper to taste)
1 egg with a tablespoon of water mix with fork
1 1/2 cup of Italian Breadcrumbs
5 sliced pickled jalapeno peppers diced
1 yellow/white/red onion sliced thin
Jar of sweet and hot red pepper relish I use Webster's
leftover peppers or fresh red/green peppers (or frozen)
Dredge pork chops in flour mixture
dip into egg mixture
place in breading
If skillet has been heating for 10 minutes, add pork chops
Don't overcrowd the skillet do as many as fit into pan with room around each chop
sear on first side about 3-5 minutes (you'll know once the chop is easy to flip over) then cook on the other side for 2-3 minutes.
Mix the Pepper Mixture together and spoon underneath and over the pork chops. Cook at 350 for about 20 minutes till brown crusty and delicious!!!

I have always had issues with pork chops - how to cook them without drying the meat out and eating a hockey puck! So, after many attempts, this does the trick! Dredging and searing are the key! Whew!!!
