Pernod Braised Fennel

Serves 4 | Prep Time 5 minutes | Cook Time 45 minutes

Ingredients

1 fennel bulb, thickly sliced
4 cups water
2 T Pernod
1 sprig rosemary
1 sprig thyme
2-inch slice lemon peel
2-inch slice orange peel
salt
pepper


Put 1 fennel in a pot; cover with water, Pernod, rosemary, thyme, lemon peel, orange peel, salt and pepper. Simmer over medium heat 45 minutes, until fennel is very tender.
