Why I Love This Recipe

Take advantage of the abundance of late-summer basil to prepare a batch of pesto.

Ingredients You'll Need

1 Can garbanzo beans
4 Cups fresh baby greens
1 Avocado, diced
1/2 Cup red grapes, halved
1/4 Cup pecans, finely chopped
1/4 Cup basil, finely chopped
1/2 Cup olive oil
1 Tablespoon lemon juice
1/2 Teaspoon salt


Directions

Rinse and drain garbanzo beans. Combine the beans with the grapes and nuts and toss over baby greens. Finely chop basil leaves and mix with lemon juice, olive oil, and salt. Well coat with pesto sauce and top off the salad with fresh, diced avocado.
