2 salmon fillets, about 1 inch thick
1 small red onion cut into 1 inch wedges
1 tbsp olive oil
1 garlic clove pressed
1/4 tsp salt
1/8 tsp ground black pepper
2 tbsp prepared basil pesto
Preheat oven to 425. Place salmon filets side by side byt not touching on pan.
Cut onion into 1 inch wedges using knife, in small bowl combine oil, garlic, salt, and black pepper. Add onions and toss to coat. Arrange veggies around salmon on pan.
Zest lemon to measure 1/2 tsp zest. Juice lemon to measure 2 tsp juice. In another bowl, combine zest, juice, and pesto and mix well. Brush top and sides of salmon with pesto mixture using Pastry brush. Bake 12-14 minutes or until salmon flakes easily with fork and onion are crisp-tender. Garnish with additional lemon zest, if desired.
