PETER PAUL MOUND CAKE
Peter Paul Mound Cake
I had this cake in my recipe box for years before I tried it - big mistake. This cake is wonderful if you like chocolate and coconut!
INGREDIENTS
- 1/2 cup cocoa
- 2 cups flour
- 2 cups sugar
- 1 tsp salt
- 1 1/2 tsp soda
- 3/4 tsp baking powder
- 1/2 cup shortening
- 3/4 cup milk
- 1 tsp vanilla
- 4 eggs
- 1/2 cup milk
- Filling:
- Mix and cook until thick, about 30 minutes:
- 3 cups angel flake coconut
- 1 1/2 cups sugar
- 1 1/2 cups milk
- 1 1/4 tsp vanilla
- Frosting:
- 3/4 cup cocoa
- 4 cups confectionery sugar
- 1 stick butter, room temperature
- 1/2 cup milk
- 1 tsp vanilla
DIRECTIONS
Sift dry ingredients together. Add shortening, 3/4 cup milk, and vanilla. Mix until flour is damp. Add eggs and remaining milk and beat well.
Bake at 350 degrees in three 9-inch pans for 30 minutes. Cool. Split layers.
While baking the cake, make the filling
Mix well.
Spread the tops of layers 1, 3 and 5 with the coconut filling. Frost the tops of layers 2, 4, and 6 and the sides of the cake with the frosting.
