Phil's Ricotta Cheese Pie

My co-worker Phil she makes this pie. This is so good. I recommend only using full milk cheese. Her mother use to make this pie. She is as italian as they come. Thanks for sharing Phil!

 


INGREDIENTS

  • Cooking Time: 1 - 1-1/2 hours
  • Preparation Time: 20 minutes
  • •Makes 5 pies:
  • •9 eggs
  • •6 lbs. whole milk ricotta cheese
  • •2½ cups sugar
  • •3 tablespoons flour
  • •1 teaspoon vanilla
  • •1 teaspoon lemon juice
  • •1 teaspoon orange juice
  • •(Pre-made pie crusts)
  • •Makes 3 pies (3-8” or 2-9”)
  • •5 eggs
  • •3 lbs. whole milk ricotta cheese
  • •1¼ cup sugar
  • •1½ tablespoon flour
  • •1 teaspoon vanilla
  • •1 teaspoon lemon juice
  • •1 teaspoon orange juice

DIRECTIONS

1.Beat eggs in bowl; add vanilla, lemon, orange juice. Add sugar. Add to ricotta, add flour and mix well. Pour into pie crusts


2.Bake at 325 for 1-1 ½ hours


3.This recipe really makes 4 full pies and 1 half pie, take some from the 4 pies to make a complete 5th.


4.Optional: you can add some chocolate chunks or chips to pie. I don't do this but I know some have.
