Philadelphia 3 Step Macaroon Cheesecake
2 cups soft coconut macaroon cookie crumbs
2 tablespoons butter or margarine, melted
2 pkgs. (8 oz. each) cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla
1 cup sliced strawberries, optional
Mix crumbs and butter. Press firmly onto bottom and up side of greased 9-inch pie plate. Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended.
Pour into crust.
Bake at 350ºF for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Top with strawberries just before serving.
Variation: White Chocolate Almond: Prepare batter as directed; stir in 3 ounces finely chopped white baking chocolate. Pour into prepared crust; sprinkle with 1/2 cup chopped slivered almonds and additional ounce chopped white baking chocolate. Bake and refrigerate as directed.
