  • 11 cups of prepared carrots
  • 12 cloves of garlic
  • 6 heads of dill
  • 6 hot chile peppers
  • 5 cups of vinegar
  • 1 2/3 cups of sugar
  • 1 2/3 cups of water
  • 4 tsp of pickling salt


  • Prepared pickling liquid: combine the vinegar, sugar, water and pickling salt in a large pot. Bring mixture to a boil, boil for 5 minutes.
  • In each hot jar place 2 cloves of garlic, one head of dill, one hot pepper and pack tight with carrots. Pour the boiling liquid to cover carrots to within 1/2 inch of top. Apply lids and screw bands. Process jars in hot water bath for 10 minutes. Makes approx. 6 500 ml. jars.
