PICKLED FISH

Ingredients

  • 1 cup white vinegar
  • 5/8 cup pickling salt
  • Pickling juice:
  • 1/2 cup sherry (20%)
  • 1 cup white vinegar
  • 1 cup sugar
  • 1 onion, sliced
  • 1/4 of a small box pickling spices

Directions

  • Cut fish into bite size pieces
  • Pack in jar
  • Combine 1 cup vinegar and pickling salt
  • Cover and refrigerate 5 full days
  • Rinse well and soak in cold water 1 hour
  • Combine pickling juice ingredients and heat to dissolve sugar
  • Pack fish and onions in jar, cover with pickling juice
  • Ready in 24 hours
