PICNIC PASTA SALAD

Ingredients

  • 1 box tricolor rotini
  • 1 head of lettuce
  • 1 pound of cherry tomatoes, halved
  • 1 red onion, diced
  • 1 pound ham cubes
  • 1 small can of black sliced olives
  • 1 pound of soy/milk mozzarella, cubed
  • balsamic vinegarette dressing

Directions

  • 1 box tricolor rotini
  • 1 head of lettuce
  • 1 pound of cherry tomatoes, halved
  • 1 red onion, diced
  • 1 pound ham cubes
  • 1 small can of black sliced olives
  • 1 pound of soy/milk mozzarella, cubed
  • balsamic vinegarette dressing
  • 1.) Cook the rotini.
  • 2.) Halve the cherry tomatoes, dice the onion, cube the mozzarella and chop the lettuce.
  • 3.) When the rotini is done, toss all the ingredients together and coat with the dressing.
  • I like to serve this at picnics with a loaf of French bread and beef pies.
