12 dried lasagne noodles
8 medium potatoes, peeled
4 - 6 large onions, sliced
2/3 c. butter
1/3 c. milk
1 tsp. salt
1/2 tsp. pepper
1-1/4 c. shredded cheddar cheese
Cook noodles according to pkg. directions.
Drain and rinse with cold water. Drain and set aside. Cook the cubed potatoes in boiling water about 20 minutes or until
tender. Drain and place in a large mixing bowl. Meanwhile in large skillet, cook onions in half of the butter about 10 min.
or until tender. Set aside. Add the remaining butter, milk, salt and pepper to
the potatoes. Using electric mixer beat the potatoes until smooth. Stir in 1/2 c. of cheese. Lightly grease a 3 quart rectangular baking dish. Stir one-fourth
of the mashed potato mixture into the onions; spread in bottom of prepared baking dish. Top
with 3 cooked noodles. Spread with one-third of the remaining potato mixture; repeat layering of noodle and potato mixture two more
times. Top with remaining noodles. Cover
and bake at 350 degrees for 30-40 min. Uncover and sprinkle with remaining cheese. Let stand
for 15 minutes before serving.
