PINA COLADA MUFFINS
- 1 (18.25 oz) box yellow or butter cake mix
- 1 tsp coconut extract
- 1 tsp rum extract
- 1 cup flaked coconut
- 1/2 to 1 cup nuts, chopped (optional)
- 1 (8 oz) can undrained crushed pineapple
Prepare cake mix following package instructions. Add remaining ingredients. Mix 1 minute - don't over-mix. Grease muffin tins or line with paper liners, and fill 3/4 full. Bake at 350 degrees F for 15-20 minutes.
