Pineapple Cheesecake Bars
1 cup all-purpose or self-rising flour
1/2 cup sugar
1/2 cup margarine or butter, softened
2 tablespoons sugar
1 pkg. (8 oz.) cream cheese, softened
2 tablespoons milk
1 teaspoon vanilla
1 can (20 oz.) crushed pineapple, drained
1 cup coconut
1 tablespoon margarine or butter
Heat oven to 350ºF. In small bowl, combine all base ingredients until crumbs form. Press in bottom of ungreased 13x9-inch pan. Bake for 10-15 minutes or until lightly browned. In small bowl, beat sugar, cream cheese, milk, vanilla and egg at medium speed for 3 minutes until smooth; stir in drained pineapple. Pour over partially baked crust. Combine coconut and 1 tbs. melted margarine; sprinkle over filling.
Return to oven and bake 15-20 minutes or until filling is set and coconut is golden brown. Cool completely; cut into bars. Store in refrigerator.
Tip: For easier handling, remove from refrigerator 20 minutes before cutting.
