You can use 1 cup of coconut instead of the chopped walnuts


Ingredients You'll Need

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
2 can (8 oz. each) crushed pineapple, drained
2 tsp vanilla
4 cups flour
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 cup (6 oz.) semi-sweet chocolate chips
1 cup chopped walnuts, optional


Directions

In a mixing bowl, cream the shortening and both of the sugars until light and fluffy


Add the eggs, one at a time


Beat well after each addition


Beat in the pineapple and the vanilla


Combine the flour, baking soda, baking powder, and the salt


Gradually add to the creamed mixture


Stir in the chocolate chips and the walnuts, if desired


Drop by rounded tablespoonfuls 2 inches apart onto greased baking sheets


Press down lightly


Bake at 375 for 10-12 minutes or until lightly browned


Remove to wire racks to cool
