Pineapple Cookies

This is an old recipe that I recieved from a friend years ago. This cookie is a soft tasty cookie that conjures up memories of my youth!!

INGREDIENTS

  • Cooking Time: 10
  • 1 C. shortening
  • 1 C. granulated sugar
  • 1 C. brown sugar
  • 2 eggs
  • 1 small can crushed pineapple
  • 1 t. vanilla
  • 1 C. chopped pecans
  • 1 t. soda
  • 4 C. flour

DIRECTIONS

Cream sugars and shortening. Add eggs and pineapple. Blend. Add vanilla, pecans, and soda. Add flour gradually. Bake 10 minutes at 325 degrees.

i LOVE pineapple cookies. my family has an old recipe for them, very similar to yours, except we leave out nuts, add some cinnamon, and top them with frosting made of powdered sugar and pineapple juice. i could probably eat 10 in one sitting!
