Pineapple Delight Cake
1 pkg yellow cake mix
1 can (20 oz) crushed pineapple
1 cup sugar
1 pkg (6 oz) vanilla pudding mix (not instant)
1 cup heavy cream, whipped and sweetened
1/2 to 1 cup flaked coconut, lightly toasted
Prepare the cake in a 9 x 13 inch pan and bake according to directions on the package.
Combine pineapple and sugar in a saucepan and bring to a boil. Cool slightly.
Poke holes in the cake with a fork. Pour pineapple mixture over it.
Prepare pudding according to directions on box. Allow the pudding to cool.
Spread pudding over top of cake. Shill cake in refrigerator.
Top with whipped cream. Sprinkle with toasted coconut before serving.
