Pineapple Upside-Down Cake
3 tbsp. butter or margarine
1/2 cup brown sugar
1 (20 oz. pinneapple slices,drained0 reserve 1/2 cp juice
1 (9 oz.) pkg. lemon or white cake mix
or 1/2 (18 1/4 oz.) pkg. lemon or white cake mix
Melt butter in microwave-safe 8-inch round cake pan. Sprinkle brown sugar over top. Arragne pineapple slices on top, and then place cherries in centers.
In a small bowl, combine cake mix, egg and reserved pineapple juice. pour batter over pineapple slices. Cook on high for 8 minutes, or until done. invert onto serving place. Serve warm or cold.
