1/2 cup tomato sauce
1 cup buttermilk or yogurt
4 slices mozzarella cheese, diced
1/4 teaspoon pepper
1 teaspoon dried oregano
1/4 teaspoon garlic powder
1-1/2 cups whole wheat pastry flour or all-purpose flour
3 tablespoons wheat germ
2 teaspoon baking powder
1 teaspoon baking soda
Sliced mozzarella cheese
Preheat oven to 400° F.
Coat a muffin tin with nonstick cooking spray.
Blend egg, tomato sauce, and buttermilk in a mixing bowl.
Add the cheese and herbs.
In a separate bowl, combine the flour, wheat germ, baking powder, and baking soda.
Pour the liquid ingredients into the dry ones and stir just until evenly moistened.
Spoon into prepared tin and top each muffin with a slice of tomato, then cheese.
Sprinkle with sesame seeds. Bake at 400° F. for 20-25 minutes.
